USAGE ---- Usage will vary from one application to another,
but we recommend between 1 to 2%. Factors which provide some downward
pressure on usage level include (not all inclusively)
pre-existing anti-microbial preservatives,
solute level (i.e. sugar, salt), reduced storage temperature (i.e.
refrigerated or frozen), opaque packaging material (i.e. ambient
light will quicken the aging process in some foods), reduced
water activity (Aw) or pH levels in the product (i.e. if the
substrate is running 4.5, you would need slightly less GP-150
than if the product were running 7.5), and the presence of
certain trace metal ions.
MORE COMMENTS ON pH ---- One of the strengths of GP-150 is
that it performs over a broader pH than other straight-use
food grade preservatives, including sorbates (still effective
at 6.0 to 6.5; more effective below, and ineffective above 7.0),
benzoates (4.0 to 4.5), and propionates (5.0 to 5.5). To prove
this point, initial anti-microbial studies on GP-150 were done
at a pH of 7.05.
INCREASED SOLUBILITY & REDUCED
WATER-TO-FAT PARTITION PROBLEMS. Potassium sorbate is far more
water soluble than sorbic acid (at 20 degrees C, pH 3.1, K-sorbate
is 58.20% soluble; sorbic acid, only 0.15%). Yet
GP-150
is more than 75% soluble in water; and 30% soluble in lipids.
In some substrates, acting alone or in concert, it will assist
in emulsification of the finished product.
STORAGE INSTRUCTIONS ---- GP-150 is best kept in a cool, dry
place - with even greater life provided when refrigerated, though
this is not required. To maximize the performance of this product,
we recommend that it be deployed into the target food substrate
within 30 days of receipt from
Natura Scio or our distributors.
This product contains
some potassium sorbate, and although techniques are incorporated
into the manufacturing process to maximize effectiveness, the
fact remains that virtually all sorbates in solution, will -- given
enough time -- degrade into other carbonyl compounds (i.e. various aldehydes,
formic acid, etc.) This is hornbook food science.
We recommend that our customers purchase enough GP-150
to incorporate into a month's turn of raw ingredient inventory.
